Air Fryer Chicken Drumsticks (Sticky-Crisp Skin)
Chicken drumsticks take about 26 minutes at 380°F (193°C) in the air fryer — turn them twice so every side of the skin takes its turn in the heat. Drumsticks are the most forgiving, best-value cut in the whole chicken: dark meat stays juicy across a wide window, the skin crisps beautifully, and a family pack costs less than almost any other dinner on this site. Season boldly — the skin can take it.

Ingredients
- 8 chicken drumsticks (about 2 lb / 900 g)
- 1 tbsp oil
- 2 tsp smoked paprika
- 1 1/2 tsp garlic powder
- 1 1/2 tsp fine sea salt
- 1 tsp onion powder
- 1/2 tsp black pepper
- 1/2 tsp dried oregano
Method
- Score each drumstick twice with a shallow cut to the bone on the thickest side — this helps the heat reach the bone so the meat cooks evenly.
- Pat dry, rub with oil, then coat all over with the mixed spices, working the seasoning into the scores.
- Preheat the air fryer to 380°F (193°C) for 3 minutes.
- Arrange the drumsticks in a single layer, not touching. Cook 10 minutes.
- Turn each drumstick and cook 9 minutes more.
- Turn once more and cook a final 6–8 minutes, until the skin is crisp and deep golden and the meat reads at least 175°F (79°C) at the bone — dark meat is best well past the 165°F minimum.
- Rest 5 minutes and serve.
Tips that actually matter
- BBQ drumsticks: brush with barbecue sauce only in the final 3–4 minutes — the sauce's sugar burns over a long cook.
- A 30-minute marinade in yoghurt, garlic and spices (tandoori-style) gives drumsticks an entirely different, wonderful life. Wipe off the excess before cooking.
- Very large drumsticks can need 30 minutes; small ones 22. Judge by the thermometer at the bone.
Why this recipe works
Drumsticks carry skin, fat and dark meat in perfect proportion — the cut most able to absorb heat and seasoning without complaint. Scoring to the bone shortens the heat's path to the slowest point, which is why these cook evenly instead of burning outside while lagging at the bone.
Variations to try
Rub swaps that all work with these timings: Buffalo (toss in hot sauce and butter after cooking), Lemon-herb (lemon zest, thyme, rosemary), BBQ (your favourite rub; add sauce only in the final 2 minutes), Cajun (paprika, cayenne, oregano, thyme) and Garlic-Parmesan (add the cheese in the final 2 minutes so it melts instead of burning).
What to serve with it
With baked potatoes and corn, or cooled for picnics and lunchboxes — drumsticks travel well.
Storage & reheating
Refrigerate up to 4 days. Reheat at 375°F (190°C) for 6–7 minutes to restore the skin.
Frequently asked questions
- Why is there pink meat near the bone?
- Dark meat near the bone can stay pinkish even when fully cooked — the thermometer is the judge: at 175°F (79°C) or above with clear juices, it is done and safe.
- Can I cook drumsticks from frozen?
- Yes — 380°F (193°C) for 35–40 minutes, turning twice, seasoning after the surface thaws at about 12 minutes. Confirm 175°F at the bone.
- How do I get drumstick skin extra crisp?
- Dry skin, a pinch of baking powder in the rub, and the second turn so no side stays in contact with the basket the whole cook.
