Air Fryer Frozen Dumplings (Crispy Potstickers)
Frozen dumplings (potstickers, gyoza) take 9–12 minutes at 375°F (190°C) in the air fryer — sprayed with oil, shaken once, and served with crisp bottoms and tender, steamed-tasting tops. They will not be identical to pan-fried potstickers with their lacy skirts, but they are remarkably close for a method with no pan, no water-splatter and no standing over the stove. Pork, chicken and vegetable dumplings all follow the same clock.

Ingredients
- 20 frozen dumplings (pork, chicken or vegetable)
- Oil spray or 1 tsp oil
- For the dip: 3 tbsp soy sauce, 1 tbsp rice vinegar, 1 tsp sesame oil, chilli flakes or grated ginger to taste
Method
- Keep the dumplings frozen until the moment of cooking — thawed dumplings stick together and tear.
- Toss or spray the dumplings with oil until lightly glossy all over. This is what crisps them; dry dumplings bake pale and leathery.
- Preheat the air fryer to 375°F (190°C) for 3 minutes.
- Arrange the dumplings in a single layer with small gaps, flat side down. Cook 5 minutes.
- Shake the basket (or turn each dumpling) and cook 4–7 minutes more, until the bottoms and edges are golden and crisp and the filling is piping hot.
- Rest 1 minute and serve with the dip mixed together.
Tips that actually matter
- A light mist of water along with the oil at the start gives the tops a more tender, steamed quality while the bottoms crisp.
- Do not use parchment under dumplings if you want crisp bottoms — direct basket contact is the crisping surface.
- Shumai and open-top dumplings cook the same way in 8–10 minutes; soup dumplings (xiao long bao) are better steamed — the air fryer dries their delicate skins.
Why this recipe works
A frozen dumpling wrapper is a thin dough waiting for two treatments at once: steam for tenderness, dry heat for a crisp base. The oiled basket gives the base its fry while the enclosed air gently steams the top — a small, honest approximation of the pan method, with none of the splatter.
Variations to try
Frozen food takes flavour best after cooking, while it is hot: toss fries in Cajun spice, garlic salt or grated Parmesan the second they land; glaze nuggets in Buffalo or honey-BBQ sauce; serve sticks and rings with marinara, ranch or garlic aioli.
What to serve with it
With the soy-vinegar dip, chilli oil, and a cucumber salad — or floated in a quick broth for a second course.
Storage & reheating
Serve immediately. Leftovers refrigerate 2 days and reheat at 350°F (175°C) for 3–4 minutes.
Frequently asked questions
- Do I need to thaw dumplings first?
- No — straight from frozen is the method. Thawed wrappers turn gummy and tear in the basket.
- Why are my dumplings dry and hard?
- Not enough oil, or too long. Dumplings need their oil coat, and they cross from crisp to tough quickly past 12 minutes at this size.
- Can I get the crispy lace skirt of pan-fried potstickers?
- Not in an air fryer — the skirt comes from a starch slurry in a pan. For that effect specifically, the pan wins; for everything else, this method is easier and cleaner.
