Air Fryer Garlic Butter Shrimp
Large shrimp take just 6–8 minutes at 400°F (200°C) in the air fryer — the fastest main course on this site. Toss them in garlic butter, spread them in a single layer, shake once halfway, and they come out plump and snappy with browned edges. Shrimp forgive nothing once they pass done, so set a timer and pull them the moment they curl into a loose C shape — a tight O means they have gone too far.

Ingredients
- 1 lb (450 g) large shrimp, peeled and deveined, tails on or off
- 2 tbsp melted butter or olive oil
- 3 garlic cloves, finely grated
- 1/2 tsp smoked paprika
- 1/2 tsp fine sea salt
- 1/4 tsp black pepper
- 1 tbsp lemon juice, plus wedges to serve
- 1 tbsp chopped parsley
Method
- Pat the shrimp very dry. Wet shrimp steam and turn rubbery instead of browning.
- Toss with the butter or oil, garlic, paprika, salt and pepper. Rest 10 minutes — no longer, or the garlic overwhelms.
- Preheat the air fryer to 400°F (200°C) for 3 minutes.
- Spread the shrimp in a single layer with small gaps. Cook 4 minutes.
- Shake the basket well, then cook 2–4 minutes more until the shrimp are pink, opaque and curled into a loose C.
- Toss immediately with the lemon juice and parsley and serve — over rice, pasta, or with bread for the garlic butter.
Tips that actually matter
- Size matters: jumbo shrimp (16/20 count) need the full 8 minutes; small shrimp may be done in 5. Cook by shape, not just by time.
- Thaw frozen shrimp fully and dry them twice — they release a lot of water.
- Add a pinch of chilli flakes or a teaspoon of Cajun seasoning for a spicier batch.
Why this recipe works
Shrimp are small, lean and quick — exactly the profile an air fryer flatters. High heat sears the outsides in minutes while the inside stays snappy, and cooking them dry (patted, not marinating wet) means the garlic butter coats instead of steaming off.
Variations to try
Keep the timings, change the coat: Cajun spice for shrimp and salmon; miso and a little honey on salmon (final 3 minutes only); lemon, dill and butter for white fish; blackened seasoning for a deeper crust; garlic, parsley and lemon over everything, always.
What to serve with it
Over garlic rice or pasta, in tacos with slaw, or on a platter with lemon and crusty bread for the butter.
Storage & reheating
Shrimp are best fresh. Refrigerate leftovers up to 2 days and eat cold in salads, or reheat at 350°F (175°C) for just 2 minutes.
Frequently asked questions
- Can I cook frozen shrimp without thawing?
- You can, at 400°F (200°C) for 10–12 minutes, but the result is noticeably more watery and rubbery. Ten minutes of thawing under cold water gives a far better shrimp.
- Why did my shrimp turn out rubbery?
- Overcooking by even 2 minutes does it. Shrimp cook faster than almost anything else in the air fryer — start checking at 5 minutes.
- Should shrimp go in a single layer?
- Yes. Piled shrimp steam in the middle and cook unevenly; cook two batches rather than one crowded basket.
