Air Fryer Hamburgers (Juicy, With Cheese Timing)
Hamburgers take 11–15 minutes at 370°F (188°C) in the air fryer for a 1/2-inch patty: about 11 minutes for medium, 13 for medium-well, 15 for well done — with ground beef's safe temperature of 160°F (71°C) as the guide for anyone who prefers certainty over pink. The air fryer makes a surprisingly good burger: the fat drips away, the patty keeps its shape, and your kitchen does not fill with smoke.

Ingredients
- 1 1/2 lb (680 g) ground beef, 80/20
- 1 tsp fine sea salt
- 1 tsp garlic powder
- 1/2 tsp black pepper
- 1/2 tsp smoked paprika
- 1 tsp Worcestershire sauce (optional)
- 4 cheese slices and buns, to serve
Method
- Mix the beef gently with the seasonings — just until combined. Overworked beef makes dense, tough burgers.
- Divide into 4 patties about 1/2 inch thick and slightly wider than your buns (they shrink). Press a shallow thumbprint into the centre of each — this stops them puffing into meatballs.
- Preheat the air fryer to 370°F (188°C) for 3 minutes.
- Place the patties in a single layer with gaps. Cook 6 minutes.
- Flip and cook to your finish: 5 more minutes for medium (about 145°F), 7 for medium-well, 9 for well done (160°F / 71°C).
- Cheeseburgers: lay the cheese on in the FINAL 1 minute with the fryer off or just finishing — residual heat melts it without it sliding off or burning.
- Rest 3–4 minutes in the buns so the juices settle where they belong.
Tips that actually matter
- The thumbprint dimple is not a myth: patties contract at the edges as they cook, and the dimple is what keeps the middle level.
- Frozen patties cook at 370°F (188°C) for 15–20 minutes, flipped halfway — season after the flip when the surface has thawed.
- Turkey burgers: same method, but cook to a full 165°F (74°C) — about 14–16 minutes.
Why this recipe works
A burger patty cooks by conduction in a pan and by convection here — the circulating heat renders fat outward and downward, so the patty bastes less in its own grease and browns evenly on both faces. The dimple compensates for the one thing convection cannot change: edges contract as proteins set.
Variations to try
Flavour directions that suit this category: Chimichurri over anything beef; honey-mustard glaze brushed on pork in the final 3 minutes; a coffee-chilli rub for steak; Italian-herb and Parmesan through meatballs; maple and black pepper over bacon in its last 2 minutes.
What to serve with it
In toasted buns with all the fixings, or bun-less over a chopped salad with burger sauce.
Storage & reheating
Refrigerate cooked patties up to 4 days; reheat at 350°F (175°C) for 4–5 minutes. Freeze raw patties between parchment up to 3 months.
Frequently asked questions
- Do air fryer burgers taste grilled?
- They taste like very good pan-seared burgers — deep browning, juicy middle — without char lines. A pinch of smoked paprika in the mix borrows a little of the grill's flavour.
- Why did my burgers shrink so much?
- Fat content and heat: 80/20 patties shrink more than lean ones, and making them wider than the bun and dimpling the centre compensates almost exactly.
- Can I cook burgers and fries together?
- In a dual-basket model, yes. In a single basket, cook the fries first and keep them warm — the burgers need the space and the single layer.
