Air Fryer Sausages (Burst-Free, Evenly Browned)
Sausages take 12–15 minutes at 380°F (193°C) in the air fryer, turned once or twice, and they come out evenly browned on every side — something a frying pan, with its one hot contact patch, genuinely cannot match. Two rules: do not prick them (the juices you release are the juiciness you lose), and give them space. That is the entire recipe, and it works for Italian sausages, bratwurst and good breakfast links alike.

Ingredients
- 8 raw sausages (Italian, bratwurst or similar, about 1 1/2 lb / 680 g total)
- Oil spray (optional)
Method
- Take the sausages out of the fridge 15 minutes before cooking so they start closer to room temperature and cook evenly.
- Preheat the air fryer to 380°F (193°C) for 3 minutes.
- Lay the sausages in a single layer with gaps between them — they brown where the air touches them.
- Cook 6–7 minutes, then turn each sausage.
- Cook 6–8 minutes more until deeply browned all over and at least 160°F (71°C) inside for pork sausages.
- Rest 3 minutes and serve.
Tips that actually matter
- Thick sausages need the full 15 minutes; thin breakfast links are done in 9–11. When a mixed pack confuses the clock, the thermometer settles it.
- Frozen raw sausages: 380°F (193°C) for 16–19 minutes, turning twice, separating them as soon as they thaw enough to move.
- For sausage and peppers: add sliced peppers and onions, tossed in a little oil, for the final 8 minutes.
Why this recipe works
A sausage is a sealed system: seasoned meat and fat inside a skin that tightens as it heats. Circulating air browns that skin on every side in turn, while leaving the seal intact keeps the fat where it belongs — inside, keeping the meat juicy. Pricking is puncturing your own lifeboat.
Variations to try
Flavour directions that suit this category: Chimichurri over anything beef; honey-mustard glaze brushed on pork in the final 3 minutes; a coffee-chilli rub for steak; Italian-herb and Parmesan through meatballs; maple and black pepper over bacon in its last 2 minutes.
What to serve with it
In rolls with onions, beside mash and peas, or sliced into pasta and bean pots.
Storage & reheating
Refrigerate up to 4 days. Reheat at 350°F (175°C) for 5 minutes. Excellent sliced cold into pasta sauces.
Frequently asked questions
- Why did my sausages split?
- Very high heat on fridge-cold sausages expands the filling faster than the skin can stretch. The room-temperature rest and 380°F (not 400°F) prevent most splits.
- Should I prick sausages before air frying?
- No. Pricking lets the fat and juices escape — the very things that make a sausage worth eating. Modern casings cope fine with air fryer heat at 380°F.
- Can I cook sausages from frozen?
- Yes — add 4–5 minutes and turn twice. Separate them early so the touching sides can brown too.
