Air Fryer Salmon Patties
The salmon patty is a pantry hero — a tin of salmon, an egg and a handful of crumbs — that fails in exactly one way: falling apart in the flip. The fix used by the best-tested recipes is embarrassingly simple: chill the formed patties for ten minutes so the binder sets before they ever meet the heat.

Ingredients
- 12–14 oz (340–400 g) canned salmon, drained very well — or the same weight of cooked leftover salmon, flaked
- 1 egg
- ⅓ cup panko breadcrumbs, plus 1 tbsp more if the mix is wet
- 2 tbsp mayonnaise
- 1 tsp Dijon mustard
- 1 tsp Old Bay or Cajun seasoning
- 2 spring onions, finely sliced
- 1 tsp lemon zest
- Oil spray
Method
- Drain the canned salmon thoroughly and pick out any large bones (the small soft ones are edible and full of calcium). Flake into a bowl — do not mash it to paste; flakes give the patties their texture.
- Fold in the egg, panko, mayo, mustard, seasoning, spring onion and lemon zest. If the mix feels wet and sloppy, add the extra tablespoon of panko.
- Form 6 patties about ¾ inch thick, packing them firmly. THE HOLD-TOGETHER STEP: chill or freeze the formed patties for 10 minutes — cold patties set their binder and survive the flip; warm ones crumble.
- Preheat to 400°F (200°C). Spray the basket and the patty tops. Air fry 5–6 minutes.
- Flip gently with a wide spatula, spray again, and cook 5–6 minutes more until deep golden with crisp edges and set centres. Rest 2 minutes — they firm up as they stand.
Tips that actually matter
- Wet salmon is the crumbling cause: press canned salmon in a sieve for a minute before mixing.
- Make them burger-size (4 larger patties) and add 2–3 minutes; make them mini for sliders and take 2 minutes off.
- A tablespoon of grated Parmesan in the mix adds a savoury crust.
- Asian style: Swap the Old Bay for grated ginger, a dash of soy and sesame oil; serve with sriracha mayo.
- Salmon burgers: Serve in toasted buns with lettuce, tomato and tartar sauce — the chill step matters even more for burgers.
Why this recipe works
Patties fail for two mechanical reasons: too much water and too little set. Canned salmon carries liquid deep in its flakes — drain it hard — and the egg-panko binder only firms when it chills, which is why the 10-minute freeze is structural, not fussy. Flake, never mash: visible flakes keep the inside tender instead of pasty. The cooking itself is gentle work — the salmon is already cooked; you are setting the binder and building the crust.
Variations to try
Keep the timings, change the coat: Cajun spice for shrimp and salmon; miso and a little honey on salmon (final 3 minutes only); lemon, dill and butter for white fish; blackened seasoning for a deeper crust; garlic, parsley and lemon over everything, always.
What to serve with it
With lemon wedges and tartar sauce or garlic aioli, a green salad, and wedges from this site.
Storage & reheating
Fridge 3 days. Reheat at 350°F (175°C) for 3–4 minutes. Uncooked patties freeze 2 months; cook from frozen at 390°F (195°C) for 14–16 minutes.
Frequently asked questions
- Why do my salmon patties fall apart?
- Two causes: the mix was too wet (drain the salmon harder, add panko) or the patties went in warm. The 10-minute chill before cooking fixes most cases.
- Can I use fresh raw salmon?
- Yes — pulse or finely chop 1 lb skinless fillet, mix the same way, and cook to 145°F in the centre, about 12–14 minutes total.
- How do I reheat leftovers?
- 350°F (175°C) for 3–4 minutes. The microwave makes the crust soggy; the air fryer brings it back.
