Air Fryer Asparagus (Lemon & Parmesan)
Asparagus takes 6–11 minutes at 400°F (200°C), and the only honest answer to 'how long' is: how thick are your spears? Thin spears need 5–7 minutes, medium 7–9, thick 9–11. This recipe gives you the snap test for trimming (the spear breaks exactly where the woodiness ends), the shake at halfway, and the lemon-and-Parmesan finish that turns a simple side into the plate everyone reaches for first.

Ingredients
- 1 lb (450 g) asparagus spears
- 1 tbsp olive oil
- 1/2 tsp garlic powder
- 3/4 tsp fine sea salt
- 1/2 tsp black pepper
- 2 tbsp finely grated Parmesan
- Lemon zest and wedges, to finish
Method
- Trim the spears the honest way: bend one spear until it snaps — it breaks where the woody part ends — then cut the rest of the bunch to match.
- Pat the spears dry and toss with the oil, garlic powder, salt and pepper.
- Preheat the air fryer to 400°F (200°C) for 3 minutes.
- Lay the spears in a single layer. Cook by thickness: thin 5–7 minutes, medium 7–9, thick 9–11, shaking once at halfway.
- The spears are done when the tips are lightly charred and crisp and the stalks are tender-crisp — bend, not flop.
- Shower with Parmesan and lemon zest, add a squeeze of lemon, and serve immediately.
Tips that actually matter
- Parmesan timing: add it at serving for a fresh, salty finish, or in the final 2 minutes for a melted, crisped cheese coat — both are right, they are just different dishes.
- Very thin spears can be done at 5 minutes — start tasting early; overcooked asparagus cannot be rescued.
- Wrapped in prosciutto (2–3 spears per bundle), the same timing makes a party starter.
Why this recipe works
Asparagus cooks from the outside in and carries almost no spare moisture in its stalk, so high heat and a short clock keep it in the narrow window between raw and limp. The tips, being thinnest, crisp first — the cook's signal that the stalks are arriving at tender.
Variations to try
The same vegetables, new accents: smoked paprika and cumin for a Spanish lean; curry powder and a squeeze of lime; everything-bagel seasoning after cooking; Parmesan and lemon; or chilli crisp spooned over at the table.
What to serve with it
With salmon, eggs at brunch, or under a poached egg and hollandaise for the full ceremony.
Storage & reheating
Best fresh. Refrigerate up to 3 days and serve cold in salads, or reheat 2 minutes at 350°F (175°C).
Frequently asked questions
- How do I know where to trim asparagus?
- The snap test never lies: bend a spear and it breaks at the boundary between tender and woody. Cut the bunch to match that spear.
- Why did my asparagus turn out stringy?
- Thick, older spears have fibrous skins — peel the lower half of thick spears with a vegetable peeler and they eat tender.
- Can I cook frozen asparagus?
- Yes — pat off the frost and cook at 400°F (200°C) for 10–12 minutes. It will be softer than fresh; season boldly.
