Air Fryer Carrots (Honey Glaze, Added Late)
Carrots take about 14 minutes at 380°F (193°C) in the air fryer for 1/2-inch pieces — and this recipe exists to teach one thing the short recipes mention only in passing: honey added at the start burns to bitter carbon before the carrots even soften. Cook the carrots with oil and salt first, then toss them in honey for the final 3 minutes, and the glaze caramelises glossy and sweet while the edges stay burnished, not blackened. Baby carrots and sticks follow the same method with their own times below.

Ingredients
- 1 1/2 lb (680 g) carrots, cut in 1/2-inch diagonal pieces
- 1 tbsp olive oil
- 3/4 tsp fine sea salt
- 1/4 tsp black pepper
- 1/2 tsp garlic powder (optional)
- 1 tbsp honey or maple syrup
- 1 tsp butter (optional) and thyme leaves, to finish
Method
- Cut the carrots evenly — mixed sizes finish mixed. Diagonal 1/2-inch pieces give the most caramelised surface.
- Toss with the oil, salt, pepper and garlic powder (no honey yet).
- Preheat the air fryer to 380°F (193°C) for 3 minutes. Spread the carrots in a loose single layer.
- Cook 8 minutes, shake well, then cook 3 minutes more.
- Drizzle over the honey (and butter if using), toss in the basket, and cook the final 3 minutes until the glaze is bubbling and amber and the carrots are fork-tender.
- Rest 1 minute — the glaze thickens as it cools slightly — scatter thyme and serve.
Tips that actually matter
- By cut: thin rounds 10–12 minutes; chunky 1/2-inch coins 15–18; baby carrots 14–17; whole thin carrots 18–22. Same temperature, same late honey.
- Savoury route: skip the honey, use smoked paprika and cumin, and finish with lemon and feta.
- Rainbow carrots cook identically and look like you tried much harder than you did.
Why this recipe works
Carrots are dense roots full of natural sugar — a combination that wants two different treatments: steady heat to tenderise the core, and a late, brief blaze of sweetness on the surface. Splitting the recipe into a savoury cook and a 3-minute glaze gives each phase exactly the heat it needs, which is why the glaze shines instead of scorching.
Variations to try
The same vegetables, new accents: smoked paprika and cumin for a Spanish lean; curry powder and a squeeze of lime; everything-bagel seasoning after cooking; Parmesan and lemon; or chilli crisp spooned over at the table.
What to serve with it
Beside turkey breast at holidays, with pork chops, or over whipped feta as a starter.
Storage & reheating
Refrigerate up to 4 days. Reheat at 350°F (175°C) for 4–5 minutes; the glaze revives decently.
Frequently asked questions
- Why did the honey burn?
- It went on at the start. Sugars scorch in under 5 minutes at air fryer heat — the final-3-minutes rule is the entire secret of glazed carrots.
- Can I use maple syrup instead?
- Yes, identically — and brown sugar works too, tossed on with a teaspoon of water to help it melt in the final minutes.
- Do carrots need peeling?
- Only if the skins are thick or bitter. Young carrots need a good scrub; the skin carries flavour and nutrients.
