Air Fryer Cauliflower (Golden, Crisp-Edged)
Cauliflower florets take 12–15 minutes at 400°F (200°C) in the air fryer, shaken once or twice. Cauliflower holds more water than broccoli, which is why it so often steams instead of roasting — the fix is embarrassingly simple: dry the florets properly after washing, toss them in oil and spices, and give them space. Choose your finish by temperature: 400°F for crisp, deeply browned edges, or 375°F (190°C) and a few minutes longer for a gentler, tender result.

Ingredients
- 1 medium cauliflower (about 2 lb / 900 g), cut in bite-size florets
- 2 tbsp olive oil
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1/2 tsp ground turmeric (optional, for colour)
- 1 tsp fine sea salt
- 1/2 tsp black pepper
- Lemon juice, to finish
Method
- Wash the florets, then dry them thoroughly — spread them on a towel for a few minutes if you have time. This step decides the recipe.
- Toss with the oil and all the spices until every floret is coated, including down in the frills.
- Preheat the air fryer to 400°F (200°C) for 3 minutes. Spread the florets in a single layer; cook in two batches rather than crowding.
- Cook 7 minutes, shake hard, then cook 5–8 minutes more until the edges are deep golden and crisped and a floret stem pierces easily.
- Finish with a squeeze of lemon and serve hot.
Tips that actually matter
- Buffalo cauliflower: toss the roasted florets in hot sauce and a little melted butter and return for 2 minutes — serve with ranch or blue cheese.
- A handful of panko tossed with the oil gives the florets a light, crunchy jacket (the Love and Lemons trick, and a good one).
- Frozen cauliflower works: straight from frozen at 400°F (200°C) for 16–19 minutes, seasoning after the first 5 minutes once the frost cooks off.
Why this recipe works
Cauliflower's florets are tiny trees with enormous surface area and a lot of stored water. Drying puts that water out of the contest, and fierce heat then caramelises the frilled edges faster than the stems can slump — the contrast of crisp tips and tender stems is the whole pleasure of the dish.
Variations to try
The same vegetables, new accents: smoked paprika and cumin for a Spanish lean; curry powder and a squeeze of lime; everything-bagel seasoning after cooking; Parmesan and lemon; or chilli crisp spooned over at the table.
What to serve with it
With chicken and rice, tossed through pasta with garlic and chilli, or as a Buffalo-style starter with blue cheese dip.
Storage & reheating
Refrigerate up to 4 days. Reheat at 375°F (190°C) for 4–5 minutes to revive the edges.
Frequently asked questions
- Why is my cauliflower soggy?
- It went in wet, or the basket was crowded. Cauliflower carries more water than broccoli — dry it like you mean it and cook in batches.
- What temperature gives the crispiest cauliflower?
- 400°F (200°C) with enough time — 15 minutes and a second shake. Lower temperatures tenderise; 400°F crisps.
- Can I make cauliflower steaks instead?
- Yes — 3/4-inch slabs from the centre of a large head, oiled and seasoned, at 400°F (200°C) for 16–18 minutes, flipped once very carefully.
